The great sweet wines of Bordeaux, Sauternes, are among the most decadent, complex and simply enjoyable wines. Their sweetness and richness with a soft quality to them makes them appealing in their youth yet they can age and improve for decades. We recommend trying Chateau du Levant 2005 with our Bramley apple & blackberry pie for a sweet finish to your meal.
Chateau du Levant 2005 Sauternes
Chateau du Levant is a great, very sweet and flowery pudding wine. The nose is a great mix of great mix of honey melon, orange peel, dried apricots and sweet apples. When it comes to taste honey comes through fairly strong, but also gives this feeling that makes the wine very smooth and almost a little viscous, reminding of a bigger Sherry. It also has a beautiful hint of mango licorice. The amazing golden color
has a hint of green but is still reflecting
bold and golden shades of sunlight.
The Mercer Bramley apple & blackberry pie
Our pastry chef Anna Smith recommends Bramley apple for cooking since it has uniquely balanced levels of acid and sugar. That gives them a strong and tangy taste and the ‘appley’ flavour is retained when cooked unlike that of sweet eating apples. Texture is also important and Bramleys are again unique in producing a 'melt in the mouth' moist texture when cooked; the apple softens from the edges and finally breaks down unlike other apple varieties.
The original Bramley apple tree was planted in 1890 and continues to bear fruit to this day. Those few pips planted by a little girl called Mary Ann Brailsford
in her garden in Nottinghamshire 200 years
ago are responsible for what is today a £50
million industry, with commercial growers
across Kent, East Anglia and the West
Midlands.
