Beverage manager Eddie Friend has chosen the best wines from our vast wine list to accompany our game dishes. It is easiest to just stick with
a good red burgundy to accompany various game dishes but if you take
a look outside the box you might just find yourself being pleasantly surprised.
A wine can either make or break a meal.
One might argue that the best wine to serve
with game is the wine you usually like and
the old rules are just in the way. We
however think it doesn’t hurt to use the
rules as guide lines which help direct you
in finding the perfect match to suit you and
your guests. There is nothing quite like
finding “The One” when it comes to wine and
food marriages.
With partridge, Eddie recommends Gevrey-Chambertin 1er Cru Les Cazetiers, Pascal Lachaux
1999. This red is very deep, dark and
serious with brooding, black fruit flavours.
It being firm and dry with a very correct,
upright style and a long finish this wine
compliments the light gamey taste of
partridge perfectly.
With the venison it is a slightly different story. The richness of venison needs a wine which is slightly higher in tannin; Côte-Rôtie Domaine Jamet 2006 is a match made in heaven. It is a full bodied red; the palate is full of spicy, peppery blackberry fruit with savoury, ripe tannins and fresh acidity.
To complement grouse Eddie has chosen Château
Lamartre St-Emilion Grand Cru 2005 which is
a big rich merlot with ripe blackberry, damson and black cherry fruit. Sweet, juicy tannins, spicy cinnamon and cedar oak and lively acidity complete the picture.
